Nourish your Yin

This green leafy is filled with vitamin C and is used in Traditional Chinese Medicine. As a Yin builder, watercress is a useful part of a medicinal diet for those who suffer from symptoms such as nightsweats, dizziness, spontaneous sweating and dry mouth.

This easy salad will soon be a favourite and fantastic for outdoor bbqs and summer days.

Ingredients

  • 2 tsp extra-virgin olive oil


  • Fresh lemon juice, 1 lemon


  • 1 large bunch of watercress


  • Handful of baby spinach leaves


  • 1 small red onion


  • Salt and pepper to taste


  • Pine nuts – raw or toasted

Directions

  • Dressing: Whisk together the olive oil, lemon juice, salt and pepper


  • Finely slice the red onion


  • Combine watercress, spinach, onions, pine nuts


  • Add dressing 10 minutes before serving for most flavour without softening the leaves
