Flax Pancakes
Great recipe that’s easy for everyone to make. Gluten-free and dairy-free! Can also be easily modified to be sugar-free, egg-free.
These are great to make ahead and freeze for a busy morning. Just let cool and store each pancake individually.
Ingredients
- 2 eggs or egg alternative*
- 1 cup milk (dairy or non-dairy)
- 1 tsp vanilla
- 2 tbsp sugar or honey (if using honey add 2 tbsp of additional flour)
- 1 ¼ cups rice flour
- 2 tsp baking powder
- ½ tsp salt
- 2 tbsp vegetable oil
- Add cinnamon to taste
- 1/3 cup ground flax seed
*If using ground flax seed as egg alternative, mix 2 tablespoons of ground flax seed with equal parts very warm water and stir. Wait 2 minutes and add more warm water as needed. Let sit for 10 minutes to allow the mixture to get to the consistency of raw egg.
Directions
- In a medium bowl beat the eggs and milk.
- Add the vanilla and the sugar or honey. Mix well.
- In a separate bowl combine and blend the dry ingredients. Add the dry ingredients and vegetable oil. Mix well.
- On a preheated griddle (175 degrees) or Teflon coated frying pan, spoon the batter onto the hot surface.
- When several bubbles appear on the surface of the pancake, flip and make a small slit on the pancake.
Makes 14 pancakes.
