Cauliflower chips

An adventure into harvesting from my garden!

This year I tried my hand at gardening. I didn’t learn these skills as a child, so I’m learning through friends and the internet- and by error!

Despite my efforts, my cauliflower and broccoli plants did not produce the desired flower (ie the typical edible component). Not willing to admit defeat, I plan to harvest the leaves from the plants and use them in recipes.

With inspiration from various internet sites, here is my first recipe for cauliflower leaves into CHIPS!

Cauliflower Chips

Ingredients


  • Cauliflower leaves – spines removed, cleaned and torn into large pieces. Enough leaves to be the equivalent to large head of lettuce


  • Sesame oil – 2 tablespoons


  • Soy sauce or tamari sauce – 2 tablespoons


  • Scallions or green onions – handful


  • Fresh garlic – 1-2 large cloves


  • Salt and pepper to taste


  • Parmesan cheese – optional



Directions

  • Preheat oven to 400F.


  • Finely chop garlic or put through garlic press. Combine with soya sauce and sesame oil and scallions.


  • Pour spice and oil mix over leaves. Use hands to distribute sauce and massage leaves.


  • Optional: add grated Parmesan to leaves.


  • Place leaves on cookie tray and bake for 12-18 minutes. Leaves will look wilted and dark green-brown.


  • Sprinkle with salt and pepper before serving.

Serve and enjoy!
