## Protein for breakfast please!

Nourish your Yin

This green leafy is filled with vitamin C and is used in Traditional Chinese Medicine. As a Yin builder, watercress is a useful part of a medicinal diet for those who suffer from symptoms such as nightsweats, dizziness, spontaneous sweating and dry mouth.

This easy salad will soon be a favourite and fantastic for outdoor bbqs and summer days.

#### Ingredients

- 2 tsp extra-virgin olive oil

- Fresh lemon juice, 1 lemon

- 1 large bunch of watercress

- Handful of baby spinach leaves

- 1 small red onion

- Salt and pepper to taste

- Pine nuts – raw or toasted

#### Directions

- Dressing: Whisk together the olive oil, lemon juice, salt and pepper

- Finely slice the red onion

- Combine watercress, spinach, onions, pine nuts

- Add dressing 10 minutes before serving for most flavour without softening the leaves
