## Cauliflower chips

An adventure into harvesting from my garden!

This year I tried my hand at gardening. I didn’t learn these skills as a child, so I’m learning through friends and the internet- and by error!

Despite my efforts, my cauliflower and broccoli plants did not produce the desired flower (ie the typical edible component). Not willing to admit defeat, I plan to harvest the leaves from the plants and use them in recipes.

With inspiration from various internet sites, here is my first recipe for cauliflower leaves into CHIPS!

#### Cauliflower Chips

Ingredients

- Cauliflower leaves – spines removed, cleaned and torn into large pieces. Enough leaves to be the equivalent to large head of lettuce

- Sesame oil – 2 tablespoons

- Soy sauce or tamari sauce – 2 tablespoons

- Scallions or green onions – handful

- Fresh garlic – 1-2 large cloves

- Salt and pepper to taste

- Parmesan cheese – optional

Directions

- Preheat oven to 400F.

- Finely chop garlic or put through garlic press. Combine with soya sauce and sesame oil and scallions.

- Pour spice and oil mix over leaves. Use hands to distribute sauce and massage leaves.

- Optional: add grated Parmesan to leaves.

- Place leaves on cookie tray and bake for 12-18 minutes. Leaves will look wilted and dark green-brown.

- Sprinkle with salt and pepper before serving.

Serve and enjoy!
